Day 87

Hacking cough has taken over. However, in other news... I'm not nearly as hungry as I was the first three days of this diet. By no means am I saying that I would love to make this a regular thing but my stomach has finally adjusted to not eating as much. I think it sucks pretty bad that just when I start a new diet I go and get sick, or maybe that's a good thing...maybe I'll lose more weight because I'm sick. LOL eh, I still have no idea how much I weigh, I need to go down to the basement at work and jump on that old school scale and see what it says. I hope it's at least three pounds lighter.



On my way home I called an old friend that I haven't talked to since Christmas time. He's doing well and on meds and chemo right now for a virus that he's had most of his life that just wont go away. It sucks, whatever it is has destroyed three kidneys, I just pray that this one will actually hold out against it. After we got off the phone I cooked Spaghetti Squash, threw some sauce on it and had a small bowl of that and a slice of whole wheat bread for dinner. I think it was a little under cooked...it's a tad crunchy but still tastes pretty yum! You should try it. It's different than regular squash for sure (I don't like regular yellow squash) and to help aid in the process here's a recipe from Kraftfoods.com for Cheesy Spaghetti Squash. SO YUM! My recommendation is to cook the squash in the oven instead of doing the microwave instructions included in the recipe... most spaghetti squash you buy will have an instructional sticker attached that tells you several different ways to cook it. It's harder to cut in half raw but give it a shot...cut the squash in half and scoop out all the seeds and goop attached to the seeds. Careful though because some of the squash may try to come out with it. Then place the pieces cut side down on a baking sheet lined with tinfoil (this just makes cleanup easier on you) and bake at 350 degrees for 30 minutes. I feel like the oven does a much better job of cooking it all the way through than the microwave BUT if you prefer the convenience of the microwave then by all means follow the instructions given in the recipe.


After that I put on a few episodes of Alias and worked on an old cross stitch that I found in one of my desk drawers. I think I started that thing three years ago maybe? I dunno, but it has sat around gathering dust for a while and so I figured it's time to try and get it done...this is going to take a lot longer than the crocheted blanket because cross stitch makes me go cross eyed! You have to focus too much on counting spaces and making sure you do the right stitch and use the right color...it's hard. But I'm gonna finish this if it kills me!
