Day 38

Today was a pretty great day. Woke up called my baby and talked for about an hour and then got ready and went to church.

Had a great lesson about Cain and Enoch and the difference between living in the moment with the things of this life or living a good Christ-like life of selflessness and having a brighter eternity. I loved it so much I wrote it down in a journal. Sadly it was the last lesson my friend Buck will be teaching in the singles ward here in Raleigh because he's moving to Utah. But I wish him none but the best in his future because he's an awesome guy and I can't wait to see what life brings to him.

After church I went over to Emily and Todd's place and chilled with Em for a while before we started cooking up some goodies for the Superbowl! OOOH it was pure awesome. I made my chili Cheese homefries and they were the bomb as usual (nothing left in the bowl at the end of the night might I add!) and we skewered some meat and veggies for kabobs. Oh and Todd grilled up some awesome burgers, chicken and hot dogs. There were amazing desserts created by Emily and I'm still waiting on that recipe for the chocolate peanutbutter pie because it was to DIE for. I am so making that for Valentines day!

I managed to make it through the first half and the halftime show but then I got antsy so Em and I started looking for Murder Mystery Games online. I found a great one, paid, and downloaded it. I'm so ready for my Birthday to get here so I can see how this game is going to unfold! I hope people have a good time...and I need to find somewhere to have it. I don't really think my house has enough room for everyone so I was thinking about doing it at a hotel ballroom or conference room but that might cut down dinner options so maybe I need to figure out another type place to have it. Gotta get my thinking cap on and figure all that out quickly!

And then it was home, curl up under my warm blankets, talk to my sweetheart for about 30 minutes to see how his day went and then I do believe it's getting to be bed time!

CHOCOLATE PEANUT BUTTER CREAM PIE
1 (9 inch) pie shell or graham cracker crust
1/2 c. sugar
2 tbsp. butter
1 egg
3/4 c. chocolate chips (melted)
3/4 tsp. vanilla
1/2 c. chopped nuts or peanuts (optional)
In a small bowl, beat butter and sugar until light and fluffy. Add 1 egg and beat at medium speed 2 to 3 minutes. Blend in melted chocolate, nuts, and vanilla. Mix well. Spread 1/2 of chocolate mixture evenly into cooled pie crust.
8 oz. pkg. cream cheese (softened)
1/2 c. creamy peanut butter
1 c. powdered sugar
1 1/2 c. Cool Whip
1 egg
In a large bowl, combine cheese and peanut butter. Add powdered sugar and 1 egg, beat until smooth. Fold in whipped topping. Spoon over chocolate mixture. Then spoon remaining chocolate mixture. Refrigerate at least 3 hours. 6 to 8 servings.
Get this!!! 620 calories per serving.
