Yum!

One thing, aside from weight loss, that I love about this diet is trying out all the new recipes. I was emailed a cookbook specifically created, by a cook no less, for the strict dietary requirements of this diet. It is amazing! I've tried so many recipes so far and I can't wait till I can try others. I've been trying to cook as many meals as possible at one time so that they're already there to be grabbed and shoved in my lunch box...that way I'm far less tempted to cheat.

Last night I was so excited to try the meatloaf recipe. I had to make homemade Ketchup first, that wasn't so bad but I think I'll use less Stevia next time because I really don't like the way it tastes. I always seem to end up using more Stevia than I mean to because it's in packets and it's harder for me to judge the right ratio... sweetener to other ingredients. Anyway, I made enough Ketchup to mix in with the meatloaf and to spread some on top and I still have leftovers for another dish. Then I added all the liquid ingredients and spices together in a bowl and plunked in the ground beef and shoved my hands in and went to work. I love making meatloaf or hamburgers because I get to stick my hands in the meat and squish it around, it's fun to play with your food :-) and then I lined a muffin tin with pieces of tin foil, thinking that this would prevent sticking and make cleanup easier. Lastly, I divided my meatloaf into two piles (because I had mixed two things of ground beef in for two meals) and then split each of those piles into three smaller balls and stuck them in the tinfoil lined muffin tin and then basted each cute little meatloaf with Ketchup and shoved it into the oven. I wish I'd taken a picture of my pretty little meatloaves (perhaps next time, because I'm pretty sure I'll be making this again) but I snagged one off google...

Aren't they so cute?? I love them! I want to make more of them! Mine aren't as pretty as these because I lined it with tinfoil and don't have the red and green peppers and they're topped with ketchup, but just so you get the idea of what they look like as muffin loafs :-) I've made these before but with deer meat and Italian spices a long time ago...they were actually pretty tasty. The best part is that you can just grab one little one and be off.

Anyway, I haven't tasted them yet but they're my lunch today so I'm super excited and I hope they taste as good as they look. If not I probably wont tell you ;-)
