Giving Thanks

Every year I rejoice when Thanksgiving comes. Not because I am happy to be off work, though I am, not because I'm so thankful to be with my family, though I am, but because I get to eat myself sick with giganormous amounts of food and it's not taboo!

Other than the eating of the food my second favorite part of Thanksgiving day is being in the kitchen all day with my mama. I love cooking! This year I came over the night before and made pies. We baked a pumpkin in the oven then scraped it out and mushed it up and baked a FRESH homemade pumpkin pie! Then my roomie locked herself out of the house so I had to go home.

Thursday morning around 10am I was headed to mom and dad's house again and ready with my apron and hands to bake me some food! This year I made punch, homemade mashed potatoes, a peanut butter chocolate fudge pie, helped with the deviled eggs and of course my signature Thanksgiving Dish... Sweet Potato Casserole! WOO! I have included process pictures this year.

First you boil the Sweet Potatoes in water until you can pierce the skin with a fork and it slides right in. Then you let them cool for a bit so you can handle them with your bare hands and you cut the skins off...they slide right off! It's so cool. Then you mash the potatoes up in a bowl.

Next you add in all the ingredients and mix them up in the bowl with a spoon and then you pour it into a casserole dish.


After you've poured your potato mixture into a casserole dish you mix up the topping of Brown Sugar, Pecans, Butter and Flour.

Then you bake it in the oven and eat it all up! And lucky me I got to take home all the leftovers! It was so yummy! I had it for breakfast several days in a row. And now I feel like I should make some more because it's so tasty! I miss it already.

After Thanksgiving we took off Friday and went up to the mountains. We drove to the Little Grandfather Mountain Christmas Tree Farm in Laurel Springs, NC. It was just me, mom, dad and my niece Aaliyah and we had a freaking BLAST! Another year of traditions in the works! YAY!

I guess someone has to enjoy sweet potatoes. I'm not one of those people... but I am grateful for people like you that eat sweet potatoes so that there aren't any leftovers of those. LoL
